MAKING TAMALES
(a Traditional Slow Food)

Making tamales is a communal activity that always
brings several neighborhood women together and the
full process is amazing to witness & participate in. 
First, each banana leaf is picked and slightly burned,
then the corn is picked and milled and the stuffing
is made from homegrown ingredients, such as
bell peppers and chicken.  After the tamale stuffing
is prepared, the women stuff each banana leaf and
fold and tie each one in a special way. 
These "banana bundles" are then steamed over
a wood-burning fire in the old traditional way. 
After several hours of work and much laughter and conversation, a great feast is had by everyone!
